
Date & Coconut Slice
Ingredients;
- 1 cup of shredded coconut
- 1 cup of chopped pitted dates
- 1/4 cup of sugar (I use raw sugar)
- 1 cup of Self Raising flour (use Gluten free SR Flour, if celiac)
- 1 teaspoon of Vanilla Essence
- 1/4 cup of olive oil (cold pressed)
- 1 egg
- 1/4 cup of milk (use lactose free, if lactose intolerant)
Method
Combine all ingredients in a bowl. Place in a baking paper lined slice tray 21cm x 23cm (8″ x 9″). Cook in moderate oven 180° C (350°F) for 20 minutes or until brown on top (check if cooked through with a skewer). When cooked remove from oven.
Cool slightly before cutting into serving squares while still warm. Once cool store in airtight container. This freezes well.
Serving suggestion
This is really nice, slightly warmed for approximately 15 seconds in the microwave before serving with a dollop of cream or Greek yogurt with a sprinkle of flaked almonds and a hot cuppa.
